Bacon the easy way

First of all you have to understand that DH is very particular about his bacon. My Dear Carnivore insists that his bacon be completely cooked, even the fat not be miost or chewy. I have had great difficulty obtaining this ballance because he also will not eat it if it is BURNT.
Necessity is the Mother off.... creativity.
This is the solution I came up with.


I now bake it because:

A) It is easier to clean up if I use aluminum foil.
B) It bakes evenly IF I get uniformily sliced peices (note that some of the cheaper packs are not uniform)
C) The fat is also baked and crispy just the way that DH likes it -- no chewy pieces there.
D) Keeps my small stove top open for other parts of the meal -- pancakes, eggs or (my favorite) french toast.
