Jeanie's Potato Bake

I had this once as a guest at the house of a family friend. I have liked it ever since.

1 or 2 potatoes, washed and silt with a knife, for each person, baked at 350 degrees for 1 hour or until potatoes are tender when poked with a fork.

Open potatoes, mash insides and add salt and pepper to taste. Top each potato with diced ham (I use real ham sandwich meat, diced heated on a plate in the microwave), veggies of your choice ( like broccoli and corn) , and shredded cheese. DH likes his topped with Ranch dressing. I like mine plain.

Optional Additions: crumbled bacon, shredded carrots, gravy, use your imagination... or just check your fridge and see what you have!

We have had this at family reunions a number of times now and it works great because grandma makes the potatoes and dinner ham and everyone else brings what they want to put on top. Then we serve dinner buffet style and add what ever looks good to the mix. It has been a winner at each of the gatherings.
